How are these smoked-fish flakes made?
Meaty milkfish back fillet is brined and smoked the way you would tinapa, then flaked finely.
You can incorporate these “tinapa flakes” into spreads to be used in sandwiches or on crackers. They can also be used as toppings for noodle dishes.
* Most tinapa flakes are made from roundscad fish (galunggong). Sarangani Bay’s specialty is milkfish (bangus).
