Tinapa is the smoked fish of the Philippines with the yellowish tint. So very delicious to eat whole-fish tinapa with freshly cooked white rice!
Beige / Grayish / Light Brown flakes are used as a topping for pancit palabok… or even as a spread filler for sandwiches.
The fish most often used for making these flakes are roundscad (galunggong) and milkfish (bangus).
