What can you use shredded young coconut for?
If you like your coconut juice with real bits of coconut in it, this young coconut is what you would use instead of the grated “old” coconut.
There is also a Filipino drink / dessert / flavoring called buko pandan, which is a combination of young coconut and green jello-like bits made from screwpine leaves. So you could mix these shreds of young coconut with the cubes of green “gelatin” or agar-agar.
You can find this product in the freezer section of Filipino stores. It’s like a flat rectangle of white-colored ice fitted snugly inside a plastic bag. There are many different Filipino and Filipino-American brands like Angelina, Lakambini, Jonas, Kapuso, Masagana, Handaan, and Tropics. Other countries like Vietnam also have their own brands that you can spot at pan-Asian supermarkets.
