Buko is tender young coconut flesh.
To compare, niyog is the mature tough coconut meat that is often grated or shaved — this is what Americans are more familiar with.
Very different texture and corresponding uses.
What can you use shredded young coconut for?
If you like your coconut juice with real bits of coconut in it, this young coconut is what you would use instead of the grated “old” coconut.
There is also a Filipino drink / dessert called buko pandan, which is a combination of young coconut and green jello-like bits made from screwpine leaves. So you could mix these shreds of young coconut with the cubes of green “gelatin” or agar-agar.
