Tuyo literally means “dry” in the Tagalog language. In terms of food, tuyo refers to heavily salted dried fish, usually herring, which is so delicious to eat with freshly steamed white rice. It’s considered poor folks’ food and the stench is awful to those who didn’t grow up eating it, but no real Filipino would deny absolutely craving tuyo. It’s even paired with champurado, a chocolate porridge!
A few years ago, Connie’s Kitchen came out with a “gourmet” version — these dried fish soaked in olive oil. Simply amazing. You can even eat it with pasta. (Filipinos are known to dress up spaghetti sauce with sardines! That’s how we are.)
