The Tagalog word pandesal is from the three-word Spanish phrase pan de sal, which means “bread of salt.”
In these modern times, the Filipino pandesal is sort of on the sweet side.
Baliwag pandesal is a lesser known “special” variant that noticeably has a yellowish tint. The usual ingredients these days are flour, warm water, yeast, soft butter, sugar, salt, egg yolks, and milk.
Pandesal called baliwag are often smaller in size that the more widely enjoyed regular pandesal that can be made quite large. You can say that the typical baliwag pandesal weighs half an ounce, while the most common size for the original pandesal is two ounces. So baliwag is a fourth the size smaller!
Though ordinarily eaten in the early morning, pandesal can be enjoyed throughout the day as merienda and even as a midnight snack. 🙂
