Pangasinan brand of Salted Fish Sauce (Balayan)
This brand takes its name from the province of Pangasinan, which is known for fish sauces, like the generic patis and bagoong.
Ironically (?) though, “Balayan sauce” is a liquid type of bagoong that takes its name from the town of Balayan, which is in another province — Batangas.
Bagoong Balayan is made by partially fermenting anchovies and salt inside large earthen jars. And now you can conveniently get a hold of it in bottles!
This sauce or liquid bagoong is a great condiment for boiled vegetables instead of the usual toyomansi (soy sauce and citrus) that is the go-to dip for Filipinos.
