Familiar with pickle relish? Substitute green papaya for the pickles and you’ve got atchara! 🙂
Spelling variations: achara, atsara
Traditionally, atchara is unripe green papaya with fine shreds of carrots, ginger, bell peppers, onions and garlic in the mix.
After being brined in vinegar and sugar, the papaya no longer has a greenish tint. It takes on more of a faint brown color. But you can still sort of pick out the orange carrots and red bell peppers.
This brand (Florence) includes bits of radish in their recipe.
