Bangus (Milkfish; Chanos) is a widely eaten fish in the Philippines. It is very bony with reportedly around 208 bones, many of which are as fine as a strand of hair. Deboning it for the mass market is difficult. Las Islas has solved it by employing Filipino women who grew up with the skill for picking out the bones.
